Golden tilefish weren’t known to many consumers before red snapper’s moratorium. Since then, it has easily taken the place of the iconic fish because of it’s sweet, mild taste. They are members of the Malacanthidae family which are normally found near sandy bottoms and coral reefs. They are harvested at the beginning of the year, on the east coast of Florida, and the harvest ends once the annual quota is filled. Mild with similar taste to lobster or crab, almost a cross between a monkfish and a snapper. It can substitute any white, mild, flaky fish. This fish can be baked, broiled, fried ,sautéed, grilled, or poached.
Tilefish are low in sodium. They are a good source of niacin and phosphorus, and a very good source of protein, vitamin B12, and selenium.
